
No pantheon of Southern Food saints (or sinners, for that matter) would be complete without
Edna Lewis (1916-1996). If you aren't familiar with Miss Lewis, beg or borrow a copy of the January 2008
Gourmet to read a newly discovered essay she did on Southern Food. Fortunately, you don't have to steal the magazine as the article is posted on their website, along with a beautiful full-length
documentary on her life called "Fried Chicken and Sweet Potato Pie." Among her many accomplishments, one was as consultant to the Middleton Place restaurant in Charleston, where some of her recipes are still being used to this day.
